Blueberry Cheesecake Bites For The Fourth of July
Every Fourth of July we do what so many other American families do: head out to see the fireworks, but first we make the rounds at family picnics, with kids dressed in red, white and blue. Children swing together and brothers play baseball games like small boys, as if they were still young and not the ones who bore the cousins playing in the distance.
A true American potluck, with potato and macaroni salads, coleslaws and chips are laid out for all to share. Grills cook burgers and bratwurst as the mothers huddle on benches and discuss how their children are sprouting up right before their eyes and faster than they imagined possible.
It's there that we spend the afternoon on Independence Day, with family and friends, at least until nightfall when we gather on blankets under one great big sky and everyone looks up at the same time to see the fireworks blast and boom and show off their colors.
It's to those picnic tables that we bring some of our favorite treats, including mini cheesecake bites, which are perfect for popping into your mouth, no fork or plate required, and small enough to feel good about splurging on one or two.
Blueberry Cheesecake Bites
8 ounces cream cheese, softened
1/2 cup sugar
1 tablespoon cornstarch
1/4 cup sour cream
2 tablespoons milk
1/2 teaspoon vanilla
30-40 mini phyllo shells
1/4 cup blueberry jam + 2 tablespoons
1 cup heavy cream
Preheat oven to 325 degrees F. Beat together cream cheese, sugar and cornstarch until smooth. Add in the egg, sour cream, milk and vanilla and beat until completely mixed and smooth.
Line the phyllo shells up on a baking sheet. Place 1/4 teaspoon of jam in the bottom of each shell. Top with cream cheese mixture until the cups are 3/4 of the way full.
Bake at 325 degrees F for 15-18 minutes until centers are just set. Turn off oven and allow to cool in oven. Refrigerate until ready to serve. Just before serving, beat together 2 tablespoons blueberry sauce with heavy cream until stiff peaks form. Pipe onto the cheesecakes and garnish with a single blueberry and serve.
Makes 30-40 mini cheesecakes.
