Easy Chicken Salad Lettuce Wraps
I'll admit that sometimes my kids surprise me. This meal, for instance, just didn't go as I thought it would. I thought that I would just make a few lettuce wraps to go along with the homemade macaroni and cheese I'd made the kids. They'd eat a few bites and get something other than just carbohydrates for lunch. I had some leftover chicken in the fridge and a few heads of lettuce to use up anyway.
When I set out their plates – chicken salad lettuce wraps next to the small bowls of macaroni and cheese – in the back of my mind I wondered if they would even be interested in the lettuce wraps, or would I be eating them for my lunch soon. To my surprise, it was the lettuce wraps that went first. In fact, before even touching his macaroni, my son was asking for seconds on the lettuce wraps and proclaiming his love for them.
Since I tend to stay far away from macaroni and cheese, making it only a handful of times a year, we haven't had it since, and we probably won't have it for many months to come. However, we have had the chicken salad lettuce wraps both for lunch and as a quick dinner since then, and I'm sure there will be leftover chicken in the fridge again soon enough that begs to be eaten.
Chicken Salad Lettuce Wraps:
For the chicken salad:
1 cup leftover chicken, shredded
¼ cup mayonnaise
2 tablespoons sour cream
½ teaspoon salt
Juice from ½ lemon
6 butter lettuce leaves, or other broad lettuce leaves
3 pieces string cheese
½ cucumber, cut into spears
Mix together all chicken salad ingredients. Lay out butter lettuce leaves and place ½ string cheese piece, 1 cucumber spear and 2-3 tablespoons of chicken salad mix into the center along the rib. Fold bottom up and roll. Secure with toothpick if desired.
Makes 6 rolls.
