Easy Mother's Day Breakfasts for Dad and the Kids to Make
Dads, with Mother's Day approaching quickly, it's time to start thinking about what you're going to do for the special woman in your life. She married you, birthed your children and puts up with you all daily. Mother's Day is the perfect time to show her how grateful you are.
Here are a few tasty recipes that are easy enough for you and the kids to throw together for mom that don't require a chef's coat and are sure to be appreciated. A simple do-ahead bake can be mixed together the night before. Just pop it in the oven and hit snooze a few times as it bakes, add some fresh fruit and a glass of orange juice and you have the perfect Mother's Day breakfast.
Cheesy Ham Egg Bake
1 pound sliced firm bread, sliced
2 cups cubed ham
½ cup green onions, diced
2 cups shredded cheddar and mozzarella
3 cups milk (whole or 2% works best)
1 teaspoon kosher salt
½ teaspoon dry mustard
¼ teaspoon onion powder
Cracked black pepper
¼ cup melted butter
3 cups cornflakes
Layer bottom of a 9"x13" pan with half of the bread slices followed by 1 cup of ham cubes, ¼ cup diced green onions and 1 cup of cheese. Repeat layers. Whisk together eggs, milk and seasonings and pour over the bread layers. Refrigerate overnight.
Preheat oven to 375º F. Melt butter and stir into cornflakes. Sprinkle over casserole. Cover loosely with foil to prevent over-browning. Bake for 45 minutes. Let stand 10 minutes prior to cutting.
Ricotta French Toast Bake
1 pound artisan bread, cubed
3 cups milk
½ cup ricotta
1/4 cup sugar
1 1/2 teaspoons cinnamon
1 teaspoon vanilla
½ cup raisins or blueberries (optional)
1 stick softened butter
1 cup packed brown sugar
1 teaspoon cinnamon
1 cup chopped pecans
Beat together milk, eggs and ricotta. Add sugar, cinnamon and vanilla and mix well. Add bread cubes and stir to moisten. Stir in raisins/blueberries, if desired. Pour into 9"x13" pan. Cover the pan and refrigerate overnight.
Then next morning, preheat oven to 350º F. Mix together butter, brown sugar and cinnamon. Then stir in chopped pecans. Remove bake from fridge and spread this evenly over the top. Bake for 50 minutes at 350º until the top begins to brown and the center is springy when tapped. Let stand 10 minutes prior to cutting and serving.
