Gluten-Free Salmon Cakes
Do you ever have evenings when you don’t have a dinner plan and the fridge is almost bare? Keeping a well stocked pantry with a protein such as canned salmon can help you pull together a meal that is healthy and delicious.
You can use gluten-free bread crumbs or instant potato flakes in these salmon cakes. Instant potatoes are a great bread crumb substitute in this recipe as well as in meatloaf. I keep a small box of them in my pantry all the time. Just be sure to read the ingredients to verify they are gluten free.
When putting together your meal, consider these foods that go well with salmon:
1 15-ounce can salmon
1 Tablespoon lemon juice
1 large egg
2 Tablespoons gluten-free bread crumbs or instant potatoes
Pepper to taste
Cooking oil (I like to use coconut oil)
1. Drain the salmon and remove the dark skin and most of the bones.
2. In a bowl, combine the salmon, lemon juice, egg, bread crumbs or potato flakes, and pepper.
3. Shape into patties.
4. Heat a thin layer of oil in a skillet on medium high heat. Add the patties, and cook about 3 –4 minutes until browned. Turn and cook on the other side.
5. Remove the patties to a plate lined with a paper towel.
