Mint Chocolate Cupcakes with Chocolate Icing (Recipe)
St. Patty's day is right around the corner. When I think of St. Patty's Day - I immediately think green. I love how pretty the green is, but I hate how the food color stains your hands and face! These Mint Chocolate Cupcakes are a fun treat for St. Patty's Day, without the green icing. You can use green mint chocolate chips in place of the mint chocolate if you would like to give the cupcakes some color.
The chocolate icing is a great recipe to use for all of your cupcakes or cakes!
Mint Chocolate Cupcakes
- 1/2 cup butter, softened
- 1 1/4 cup sugar
- 1 tsp. mint extract
- 2 large eggs
- 1 cup of all purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. unsweetened cocoa
- 1/2 cup of mint chocolate finely chopped (can use mint chocolate chips)
- 4 tsp. milk
Yields 12 cupcakes
Preheat Oven to 350 F. Line muffin cups with muffin liners. Set aside.
In a small bowl, whisk together butter, sugar and mint extract. Slowly add eggs and whisk together. Add in flour, cocoa, baking powder - fold in. When mixed thoroughly, add in chocolates and milk. Mix until blended.
Fill paper-lined muffin cups half to two-thirds full (Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 20 minutes before removing from pans to wire racks to cool completely. Cool completely.
- 1/2 cup + 1 Tbsp. softened butter
- 1/2 tsp. vanilla extract
- 1 1/3 cup confectioners sugar
- 1/2 cup unsweetened cocoa
- 2 Tbsp. milk
In a large bowl, whisk butter and vanilla extract until light and fluffy with electric mixer. Sift in confectioners sugar and cocoa, then add milk. Mix by hand until all combined - then whisk with electric mixer until smooth. Do not over mix.
Decorate with green sugar or other St. Patty's Day themed decorations.
