A New Take on Strawberry Rhubarb Pie
Inspired to make a pie, I set out to use what was in season: strawberries and the massive stack of rhubarb from my plants in the backyard. Originally I thought I'd make a traditional strawberry rhubarb pie, with both cut and mixed together in a sweet sauce and used as filling between two crusts.
However, somewhere between that thought and the actual making of the pie, it turned into a rhubarb pie in an almond shortbread crust topped by fresh strawberries in a sweet glaze. Perfect for summer and with the strawberries at the forefront, come get the recipe over on Food for My Family.
