Pursue Your Passion (Recipe: Frozen Yogurt with Passion Fruit)
As I stand at the beginning of 2012 I stare into the next months and think of what is to come and what I want it to be. First, I must look back at 2011: The things that were important and the things that didn't get done but I wished I would have, and I'm instantly reminded that life is about more than getting by. Life is about living.
For 2012 I intend to pursue my passions with more vigor and excitement, to attack them and conquer them, sharing them with those around me. For me, this means telling the world about food. It means sharing my soul and opening it up whole, pouring words onto pages and describing the beauty that comes when you treat your body right.
It means writing the book proposal for the book I want to write and am passionate about, to teach people how to feed their family with more than just food on the table. It's about teaching my kids the process of eating so they can enjoy it fully, not fighting or battling internal struggles with food as I did as a teen and so many others do on a daily basis.
For me, it means opening doors I thought might be closed, taking chances and always, always looking forward.
Frozen Yogurt with Passion Fruit
- 3 cups strained/Greek-style yogurt (whole or 2%; not fat-free)
- 3/4 cup sugar or 1/3 cup raw honey
- 2-3 passion fruits
Mix together yogurt and sugar/honey until completely incorporated. Refrigerate for at least one hour. Freeze in an ice cream maker according to the manufacturer’s directions.
Scoop insides from passion fruit and spoon over frozen yogurt just before serving.
Makes 6 servings.
