Salmon Stars for the New Year: Appetizer Recipe
Each year my husband and our group of friends rents a space in a trendy local bar. They invite friends from work and friends of friends to come and play for New Year's, specifying only that you must come dressed to impress. Custom-mixed music fills the room, glasses of champagne are clinked and we ring in the New Year with the same enthusiasm year after year in the presence of friends.
Before the New Year countdown, however, having a few snacks and finger items for the guests helps to get the room warmed up and keeps the effects of the cocktails from hitting quite so hard. Plenty of leftover Christmas cookies always make an appearance, but New Year's calls for a bit more than just holiday leftovers.
Salmon Star Appetizers
20 pieces of sandwich bread
3-4 tablespoons butter
4 ounces Gruyere cheese, thinly sliced
10 thinly sliced pieces smoked salmon
lemon slices and parsley for garnish
Preheat griddle to medium. Butter the bread and toast the bread on both sides. Cut star shapes with a 2" star cookie cutter, 4 stars per slice of bread. Place a slice of Gruyere cheese on one slice of bread, top with a piece of smoked salmon. Top with a second star toast. Garnish with lemon slice and parsley. Skewer the sandwich bite with a toothpick to secure.
Makes 10 appetizers.
