Spring Is In The Air: Strawberry Spinach Salad
My kids just finished their spring break, and for the first time in years it actually felt like "spring" break. Last year we shoveled the driveway, watched the snow fall, and took them snowboarding. This year we wore shorts and sandals, tackled outdoor projects, and had a bonfire. It was warm. The sun was doing more than shining, it was beaming.
I'm shaking out the rug, closing the door on potatoes and stews, and we're turning to the flavors of the season: the new season. Some of the first things to appear fresh and bright and reminding us that the earth is still alive under all that dead grass are the strawberries and the spinach, and warm weather is begging for a springy salad to match the feel in the air.
This spinach and strawberry salad is the perfect accompaniment to spring cleaning. Fresh and packed full of bright flavors, it's also easy to throw together.
Strawberry Spinach Salad
- 4 cups baby spinach
- 1 cup strawberries, hulled and sliced
- ¼ cup feta cheese, crumbled
- ¼ cup sliced almonds
For the balsamic dressing:
- 4 strawberries, diced
- 2 tablespoons balsamic vinegar
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- 4 tablespoons extra virgin olive oil
Toss together spinach, strawberries, feta and almonds. To make the dressing, blend together strawberries, balsamic vinegar, maple syrup, lemon juice, and salt. Slowly drizzle in the olive oil while blending to create an emulsion.
Drizzle the dressing over the salad and serve immediately.
