Super Bowl Recipe: Bacon-Wrapped Jalapeño Poppers
I'm not much of a Super Bowl fan. Something about my father's obsession turned me off to the actual game. I do, however, appreciate the opportunity for a party largely focused around food. Food and more food. The commercials are entertaining, too.
On the top of my list of party food likes are the appetizers. Something about warm, savory bites that are popped in your mouth one minute and gone the next just keep me coming back for more, and jalapeño poppers are way at the top of my "love" list.
These bacon-wrapped jalapeños are stuffed with cream cheese and just a bit of apricot jam to sweeten the sting of the pepper. They're easy to assemble ahead and bake just before serving, which also makes them ideal for snacking parties like the Super Bowl.
Bacon-Wrapped Jalapeño Poppers
12 jalapeños, halved and seeded
4-6 ounces cream cheese
1/4 cup apricot jam
1 pound bacon, slices cut in half
Preheat oven to 400 degrees F. Spread a tablespoon or so of cream cheese in each jalapeño half. Top with a teaspoon of apricot jam, spread to cover. Wrap half a slice of bacon around each half, tucking in to secure.
Bake on a lined baking sheet at 400 degrees F for 17 to 20 minutes or until bacon is crisp. Allow to rest at least 5 minutes before serving.
Makes 24 jalapeño bites.
