I wake up to eat! After all it’s called break-fast. I think about what I want for breakfast even before I get out of bed. Lucky for me, my husband Bill makes me funny, healthy, creative breakfasts with whatever food I’m in the mood for. Within minutes, an edible masterpiece appears. If I ask for oatmeal, I never know what healthy ingredients Bill is going to add.
Typically, I have protein such as cottage cheese, or an egg. Sometimes I have a cup of non-fat yogurt, flax seeds and protein whey. How shocking to see what that turns into!!! Sometimes, I have a hard time digging into the wacky breakfasts Bill makes.
I have a hearty appetite and a good nutritious breakfast keeps me satisfied until lunchtime.
Having grown up with the habit of eating breakfast, I naturally made a healthy breakfast for our daughters, Lisa and Nina. That was easy during the week. It didn’t take long to figure out how to plan ahead for weekend mornings so that the girls would eat a healthy breakfast and we could sleep a little longer.
I would prepare hard boiled eggs ahead of time. I also had string cheese, bread and whatever fruit was in season washed and at the ready. It gave us a little extra time to sleep and they had a nutritious breakfast.
Once, when our nephew Craig slept over, he and Lisa played a trick on Nina. They gave her a raw egg and Nina cracked it on the table thinking it was hard boiled. We awoke to Nina’s scream and ran into the kitchen to see a raw egg smashed and dripping off the table. Outside of that incident, our pre-planning worked well.
Bill didn’t always eat breakfast as a young man. One day, as an art student, he was late for class and ran to the train without eating any food. While rushing up the subway stairs he felt faint and lay down on a bench. A policeman offered help. After Bill explained what was wrong, the kind officer told him to always eat breakfast, and then treated him to one. Bill has never missed a healthy breakfast since.
And neither should you!
