Brown Bag Lunch: Roasted Chicken & Homemade Hummus
Stuck in a lunch rut? My kids love this chicken sandwich with homemade hummus. Pair it with crunchy edamame and you’ve got a healthy and satisfying meal.
Cooking Tip: Roast a whole organic chicken in advance so you’ll have shredded meat on hand. (Stuff the chicken with lemons, onions, thyme and lightly drizzle with canola oil over the skin, season with kosher salt and freshly ground black pepper. Roast at 400 degrees F. for 18 - 20 minutes per lb)

Here is my recipe for easy, homemade hummus:
1 (15-ounce) can garbanzo beans - drained, rinsed
1/2 cup tahini (sesame paste)
1/4 cup freshly squeezed lemon juice
1 garlic clove - chopped
1 teaspoon paprika
1/2 teaspoon ground cumin
Kosher salt / freshly ground black pepper
Add first 6 ingredients into the food processor fitted with the blade attachment. Season with 1 1/4 teaspoon salt and 4 turns on the pepper mill. Purée and slowly drizzle in 1/4 cup water through the feed tube. Purée until very smooth, 2 minutes. Scraping down the sides, periodically.
