Crock Pot Beef Stew Recipe
I love this time of year. The weather has just begun to change here, and temperatures are dipping into the low 40's at night. The trees are changing colors and the air has a fresh, crisp coolness to it.
It is the perfect season for cooking comfort food. As the daylight gets shorter and the tempatures chillier, I begin to rely on my crockpot for easy, hearty meals.
My husband asked why I haven't made beef stew in several years. I can't believe it was true, but it turned out it was. I don't know why, because this meal is easy and delicious. I dusted off my old recipe card and made this yummy dish!
Crock Pot Beef Stew
- 2 lbs Beef Stew Meat (cubed)
- 3-4 potatoes, diced
- 4 carrots, sliced
- 2 stalks of celery, sliced
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
- 1/4 cup flour
- 1 bay leaf
- 1 tsp. paprika
- 1 tsp. Worchestershire Sauce
- 1 cup beef broth
- 1 cup Red Wine (if you don't want to use wine, use another cup of beef broth)
- 1 white onion, diced
Put beef in the crock pot. Mix in flour, salt and pepper. Coat the beef with flour mixture. Stir in remaining ingredients.
Cook on high for 4-6 hours. Cook on low 6-8 hours.
*This makes a very thick/hearty beef stew. If you like yours a little more soup like, you can always add more beef broth towards the end or during cooking.
Note: Cooking time may vary based on your slow cookers setting.
