Gluten Free Lemon Pepper Chicken Recipe
This is one of my favorite meals for the summer. It is so easy to prepare and everyone enjoys it! I love that I can prep in the morning and then don’t think about dinner again until my husband fires up the grill. It is a light and moist entrée. The longer it marinades the juicier it gets! I hope you enjoy this naturally gluten free meal as much as I do.
Gluten Free Grilled Lemon Pepper Chicken Recipe
3 boneless chicken breasts
¼ cup olive oil
Lemon Essential Oil, optional
In a large zip-lock storage bag add 3 chicken breasts, the juice from 1 lemon, ¼ cup olive oil, ¼ tsp sea salt and ½ tsp black pepper. Add 1-2 drops lemon essential oil if desired.
Cover chicken with mixture and marinade in the refrigerator for at least 4 hours (you can marinade overnight for more lemon flavor).
Preheat grill to medium temperature and add chicken. Grill for 20 minutes or until done.
We like to enjoy this meal with wild rice and corn from the Farmer’s Market. A nice spinach salad would be good too!
