Gluten-Free Lunch Solutions and a Chicken Salad Recipe
With kids heading back to school soon, moms are thinking about lunches. Packing a lunch for your child can save money and ensure that the lunch is healthy. If your child is gluten free, packing a lunch is probably the only option you have.
There are a few good gluten free breads out there, but you might want to consider options other than sandwiches. Try packing gluten-free crackers, tortilla chips, or a homemade muffin along with protein sources such as chicken salad, hard boiled egg, cheese slices, or nut butter. Don’t forget to add easy to eat fruit and vegetables.
You can use large lettuce leaves as a sandwich wrap. The leaves replace bread and hold the sandwich fillings. For a young child, add the fillings, wrap the leaves and secure with a toothpick. For an older child you can pack the leaves and filling separately if they prefer it that way.
If your child likes salad, there are many variations you can make by using different lettuces and a variety of vegetables, and topping it with chicken, steak, ham, cheese, egg, nuts, or seeds.
Once the weather turns cooler, soup is a welcome change to packed lunch fare. You could make soup for dinner the night before, then reheat leftovers and put them in a thermos the next morning. Don’t forget to pack a spoon!
One of my favorite lunch items is chicken salad. It can be eaten alone, on crackers, or on top of a salad. You can also change the spices and additions you use to keep it varied and interesting from week to week.
If cooking the chicken and making the salad sounds like too much work, consider buying a gluten-free rotisserie chicken. Be sure to check the ingredients since some rotisserie chickens are not gluten free.
The same is true for pre-made chicken salad. Many times it contains gluten, usually from wheat.
Gluten-Free Chicken Salad
- 4 cups cooked cubed chicken breasts
- 1/2 cup mayonnaise
- 1/2 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup sliced almonds
- 1/4 cup raisins
- Place the cubed chicken in a large bowl.
- Add the mayonnaise, onion powder, garlic powder, salt and pepper and stir to coat the chicken well.
- Add the almonds and raisins and toss to combine.
