Gluten Free Summer Lunch Idea: Tropical Tuna Fish Sandwich Recipe
If you like tuna fish sandwiches, then this sandwich with a kick will likely become one of your new favorites. With multiple layers of taste, this tropical tuna fish recipe will surprise you with a flavor burst in every bite. I love this traditional favorite with an island twist. This recipe is gluten free and when served on gluten free bread or crackers it's an easy go-to summer lunch on my menu plan.
- One Can of Albacore Tuna (I love Wild Planet)
- One Tablespoon of Miracle Whip, Mayonnaise or Veganaise
- One Teaspoon of Texas Pete Hot Sauce
- One Tablespoon of Worcestershire Sauce
- ¼ Cup of Diced Celery and Onions
- ¼ Cup of Blended Mango Juice (Cantaloupe works well also)
- Two Slices of Bread (I love Udi's)
- Optional Pickle on the Side
Step one – Blend about ¼ cup of mango juice or cantaloupe juice and set to the side. Make sure to use ripe fruit because green fruit will effect the taste in this recipe. You can even add chunks of fruit to the mixture.
Step two - Take one can of Albacore tuna and put in a mixing bowl. Put in a pinch of salt and pepper, as well as the Texas Pete and Worcestershire saucee. Mix well.
Step three – Add the rest of the ingredients to the mixture and mix well. Some like to blend it almost into a puree, but I like it just hand mixed personally. It gives it some texture and the fruit flavor pops out more.
Step four – Add the mixture to bread, crackers or even celery sticks. I like a sandwich with a pickle on the side for the ideal lunch. You could even serve on a bed of lettuce with slices of fruit.
While the Tropical Tuna Fish Sandwich is not complicated, it is flavorful and healthy. I have tried it with many fruits, but the mango works the best. The combination of spice and fruit is perfect for summer and will have you going back for seconds. In my mind I like to enjoy it and dream of the Caribbean.
