My Soup Obsession Continues! Italian Sausage Soup Recipe
I thought that perhaps my Fall obsession would be solely dedicated towards 1) The Election and 2) Fashion, but it appears I have other "hot" topics on my mind.... all the time... like soup. I know how to whip up a good homemade chicken noodle soup (much like my "famous" meatloaf, I don't have a recipe I follow... I just sort of throw things together and it works... and tastes friggin fantastic, if I do say so myself)... AND as I've written about, I know how to follow Dee's amazing Tortilla Soup. But recently, I've been on a mad hunt to find a soup that's as easy, affordable, and that both boys (son and boyfriend) will love.
Meet my friend Ashley's Italian Sausage Soup. When I saw her post a pic on Instagram, I knew I had to have the recipe. 1) It looked delicious. 2) It has ingredients I love and I know my guys will love and 3) Ashley has 1 year old twin boys. If she can make this soup, then *I * can make this soup. Truth be told, if she can make dinner at ALL, then I really have no excuse for ever ordering take-out again.
Italian Sausage Soup
-1lb. mild or hot Italian Sausage
-1 large onion, chopped
-5 cups chicken broth
-1 cup tortellini
-1 large can whole tomatoes
-1 tsp basil, dry
-salt and pepper to taste
-6 oz can of tomato sauce (if desired)
Remove sausage from casing and brown. Add onions and saute until onions are transparent. Drain and add broth, tomatoes and basil. Bring to a boil and add tortellini, salt and pepper. Let simmer for 25 minutes. A small 6 oz can of tomato sauce may be added if desired.
