Party Food: Spicy Cheese Straws Recipe
Cheesy and just a little bit spicy, these straws are lovely enjoyed with a glass of your favorite wine or cider.
Spicy Cheese Straws Recipe
1 cup plain/allpurpose flour
a pinch of sea salt
1/2 teaspoon cayenne pepper
1/2 teaspoon mustard powder
6 1⁄2 tablespoonsunsalted butter, chilled and diced
1 cup mixed grated mature Cheddarand Parmesan cheese
a baking sheet, lined with baking parchment

Sift the flour, salt, cayenne and mustard powder into the bowl of a food processor. Add the butter and pulse the ingredients until they look like breadcrumbs. Add the grated cheeses and pulse again until the dough starts to come together into a ball.
To knead the dough, sprinkle a little flour onto a clean work surface. Shape the dough into a ball and push on it and press it onto the work surface. Do this very briefly, just to bring the dough together. Flatten into a disc, cover with cling film/plastic wrap and chill in the refrigerator for 30 minutes.
Preheat the oven to 375°.
Tip the dough onto the floured work surface and roll out until it is about 1⁄4 inch thick. Cut into 3⁄8-inch wide strips and arrange on the prepared baking sheet. Bake on the middle shelf of the preheated oven for about 12 minutes, or until golden. Serve warm or cold.
