Quick and Easy Lowfat 7 Layer Dip
If you’re looking for something for your summer barbeques, then you need to try this 7 layer dip. It’s super quick and easy, looks colorful and festive and is always a hit! It’s my go to appetizer. You can have it at room temperature or heat it up just before serving. I don’t know why it’s always called 7 layer dip, you could make it 6 layers or 8 layers. It just depends on what you like, but here’s the basic recipe and you can change it up with different toppings.
1 16 oz. Can Fat-free Refried Beans (I prefer the salsa one for more flavor)
1 cup Lowfat Sour Cream
1 cup Guacamole (store bought or I prefer mashing a few fresh avocados with lemon)
1 jar Salsa
1 cup Light Shredded Mexican Cheese
2 Tomatoes (chopped)
1/2 cup Chopped Green Onions
1/2 cup Chopped Olives
1 4oz. can Green Chiles or Jalapenos (if you prefer spicy)
1 bag Baked Tortilla Chips
First mash avocados in a small bowl. Then chop tomatoes and green onions and set aside. Drain chiles and olives.
Start with a glass rectangular dish. Spread the refried beans evenly on the bottom as the first layer. Then add a layer of sour cream. Then add guacamole layer. Cover with salsa, then mexican cheese. Garnish with tomatoes, green onions, olives and green chiles. Warm and serve with chips.
