Salad Has a New Face
Children will be back at school in a couple of weeks so there’s still time to try new recipes that could hopefully become habit forming when school begins.
Many children like fruit, but it’s hard to get them to eat salad.
If you want kids to try new foods mix them with foods they already enjoy. Add fruit and other goodies to the salad greens.
With fresh fruits and vegetables so plentiful and luscious try a salad that mixes fruits, vegetables, cheese and nuts or whatever else you might have on hand.
I have always cooked soups with abandon- throwing in whatever vegetables were left in the refrigerator and adding some soup bones or vegetable broth. But my salads were pretty traditional- healthy, but not creative. I might have added chicken leftovers, or some dried cranberries, and avocado, but this summer I’ve become much more adventurous and the family is enjoying salad surprises.
I never would have considered adding fruits to a salad of chickpeas, sliced cheese and nuts.
Last week I made a lettuce and tomato salad and added sliced mango, feta cheese, walnuts, radishes and fresh herbs from the balcony. It was delicious.
I also made a salad with leftover cooked rice, feta cheese and chunks of cold watermelon. It was delightful. How could a child turn down a juicy piece of watermelon surrounded by other healthy ingredients?
Other nutritious ingredients you might add: pine nuts, almond slivers, sunflower seeds, kernels of corn, cucumbers, beans, artichoke hearts and orange slices.
I like to vary the greens. I use romaine lettuce, a spring- mix , spinach or bibb lettuce –whatever looks good.
I’ve been making so many salads packed with fruits and nuts, that for a change, we sometimes eat a simple salad of arugula, Parmesan slices with a fresh squeezed lemon and olive oil.
However, we continue to experiment with different fruits in the salad. Today I’m adding oranges and left over quinoa.
Put a new face on your salads and you might have more requests for seconds.
