The Quintessential Cinco de Mayo Recipe: Quick and Easy Guacamole
I really learned to appreciate Mexican food when I first went gluten free. Many Mexican dishes rely on rice or corn rather than wheat, and I found that many recipes were naturally gluten free.
Some Mexican fare does use flour tortillas which are made from wheat flour and do contain gluten, but often times corn tortillas can be substituted, and there are plenty of other Mexican recipes to choose from that don’t use flour tortillas.
If you’re looking for gluten-free recipes to serve this Cinco de Mayo, consider Mexican Corn Bread Casserole, or if the weather is still chilly try Taco Soup. And don’t forget to put out Mexican appetizers. Tortilla chips and salsa are both usually gluten free, just be sure to read the ingredients.
Guacamole is another appetizer that is usually gluten free, and it’s super easy to make your own. This version is chunky and flavorful but not spicy. Feel free to use a hot pepper if you prefer.
- 3 ripe avocados
- ½ an orange bell pepper
- ½ cup chopped tomato
- 2 cloves garlic, minced
- 2 teaspoons lime juice
- salt & pepper to taste
- Peel the avocado and remove the seed. Place in a bowl.
- Add the bell pepper, tomato, garlic, and lime juice.
- Mash by hand with a potato masher.
- Add salt and pepper to taste.
