Tortilla Soup Recipe For Your Soul!
It may sound silly but the truth is food evokes feelings. And when I think about Fall and comfort, I not only think of hearty foods like squash) but I think of soup... After all, soup is for the SOUL, like Steel Magnolias is for a good cry.
If you think Steel Magnolias is a story about friendship between strong women, you haven't heard the complete story about my Nana and her best friend Dee.... Their friendship started in the 60's, when my Nana and Papa moved their family from Chicago to Southern California.... Four decades, children, grandchildren, divorce and deaths, they had a friendship and a love.
Dee was like a second grandmother to me. Her energy and enthusiasm was infectious and she was by far, my favorite friend of my grandmother's.
Sadly, Dee passed away a few months ago. I have many fond memories of Dee and I can't lie when I say one of my best memories is her soup.... My Nana's Matzoh Ball soup could win awards (as could her brisket and a thousand other things she cooks), but Dee's Tortilla Soup is equally renowned and requested in our family.
So if you're looking for a fantastic family meal, full of hearty, healthy ingredients, and that is super easy and inexpensive to make, look no further! It’s as delicious and spicy as Dee’s personality. Pretty fitting I guess….
Dee’s Turkey Tortilla soup
1 Tsp olive oil
1 large onion - chopped
1 clove of minced garlic
1 can diced green chilies
1 teas. chili powder
1 teas. cumin
1/2 teas. oregano
1/4 teas. cayenne pepper
6 cups chicken broth
1 28 oz. canned tomatoes
12 oz. cooked turkey - cut up in to strips
1 16 oz. canned corn
1/2 cup chopped fresh cilantro
5 oz. jack cheese, grated
salt and pepper
1. Heat oil in heavy sauce pan
2. Add onion and sauté until translucent
3. Add green chilies, chili powder, cumin, garlic, oregano, and cayenne. Stir 1 minute
4. Add broth and tomatoes, including their juices. Add turkey and simmer until cooked through (about 3 minutes)
5. Add corn and simmer 1 minute.
6. Mix in cilantro. Season with salt and pepper.
Ladle hot soup in bowls. Sprinkle each serving with generous amount of cheese and chips, and a sliver or two of avocado if you desire.
Serve, passing extra cheese & tortilla chips separately.
