Tired of the Same Old, Same Old? 3 Better Breakfast Ideas
Boring, same old, same old, been there, ate that yesterday. I don’t mind telling you that I’ve been in a bit of a breakfast rut lately. My breakfast choices have left me uninspired. And isn’t that the point of breakfast. To inspire. To affect and guide a change that will drive the rest of my day. Yep. That is the point.
That first meal of the day gives us the critical brainpower that we need to make it through deadlines and diapers. Since my day is full of those, I need to get this breakfast thing right. I’m so often focused on what’s for dinner that I forget what’s for breakfast. So it’s time to think outside of the cereal box for some breakfast ideas that are high in lean protein, fiber, fruits, vegetables and low fat dairy.
I’ve got a list of better breakfast ideas that will help get me (and you) out of the breakfast rut and on to a really great day.
Everything (Good) Omelet
- 2 large eggs
- Salt and freshly ground black pepper
- re-sealable plastic freezer bags
Add-Ins of Your Choice
- chopped peppers (red, green, yellow)
- onions
- mushrooms
- turkey sausage
- low fat shredded cheese
- diced red onion
- diced tomatoes
I love this recipe because this omelet is actually boiled. I can get dressed while fixing it which is always a plus. In a medium mixing bowl whisk together eggs, salt, pepper and any of the desired add-ins. Divide and pour the egg mixture into re-sealable plastic bag. Boil a large pot of water and drop in the sealed omelette bags. Simmer the bag for 5 to 8 minutes. Remove bag from the water with tongs and drain. Allow to cool slightly before handling. Open the bags and pour the cooked omelet out onto a plate.
English Muffin Breakfast Pizza
- 1 whole-wheat English muffin, split
- 1 small tomato, seeded and diced
- 1 teaspoon extra-virgin olive oil
- 1 thin slice (1/2 ounce) meat of your choice diced (such as turkey sausage, chicken, even Canadian Bacon)
- 1/4 cup shredded part-skim mozzarella cheese
Place English Muffins on a cookie sheet and place in oven that has been preheated to 450 degrees. Top each with tomato and drizzle with the olive oil. Sprinkle the meat over the tomatoes, then top with the mozzarella. Bake for 10 to 12 minutes, or until the cheese is melted and beginning to brown. Sprinkle with basil.
Veggie Breakfast Burrito
- 2 eggs
- 2 tbsp milk
- salt and pepper to taste
- 1 tbsp vegetable, olive oil or butter
- 1/4 cup grated cheddar cheese
- 2 tbsp salsa
- 1 flour tortilla
Whisk the eggs and add milk until well beaten, season with salt and pepper. Heat the oil or butter in a skillet over medium-high heat. Add the eggs. Cook, mixing frequently, until you have scrambled eggs to your liking. Warm the flour tortilla in the microwave for a few seconds just until warm and soft. A tip to get the tortilla just right is to place a wet napkin over it while warming to give it the steaming effect. Place the scrambled eggs in the center of the flour tortilla, and top with cheese and salsa.
